FOOD POISONING: DEFINITION: Food poisoning is due to bacterial poisons in food. It occurs when bacteria (usually staph) get in to food, then have time to grow before the food is eaten. SYMPTOMS: Symptoms usually begin about an hour after the contaminated food is eaten -- typically abdominal cramps, vomiting, and diarrhea. Refrigeration of food usually prevents food poisoning. Food poisoning usually resolves within a few hours without treatment. THERAPY: The bowel should be rested: nothing by mouth for about four hours, then frequent sips of clear liquids for another six to eight hours. IF PROBLEMS: Further treatment may be required for severe or prolonged vomiting, dehydration, or severe abdominal cramping. Call the doctor or come back if symptoms do not resolve within 24 hours, or if you worsen in any way -- for example you develop worsening pain, high fever, or blood in the stools.
